WE ARE CURRENTLY SEEKING A BUTCHER - JUNIOR BLOCKMAN.

Butchers cut, trim, and package meat for retail sale in-store and for specific restaurant portioning for delivery; from larger, wholesale portions into steaks, chops, roasts, and other cuts. They then prepare meat for sale by performing various duties, such as weighing meat, wrapping it, and putting it out for display. In the retail store, they also may wait on customers and prepare special cuts of meat upon request, or be required to service customers over the phone.
DUTIES:

Sharpen and adjust cutting equipment

Receive, inspect, and store meat upon delivery
-
Cut, bone, or grind pieces of meat
-
Weigh, wrap, and display cuts of meat
-
Cut or prepare meats to specification or customer’s orders
-
Store meats in refrigerators or freezers at the required temperature
-
Clean equipment and work areas to maintain health and sanitation standards
-
Track inventory and perform record-keeping duties
-
Ensuring adherence to the stock count procedures and processes

General administrative duties
-
Managing production, block test and recipe controls
-
Managing production hygiene and hygiene in the production area
-
Checking deliveries (inbound and outbound) for accuracy and potentially placing orders with suppliers
Butchers use sharp tools such as knives, grinders, or meat saws. They must follow sanitation standards when cleaning equipment, counter tops, and working areas in order to prevent meat contamination.
As a junior blockman in Gonubie Butchery you will be required to oversee the production process to ensure all customer orders are met on time, to specification and to the highest quality, ensuring the specific recipes and cutting techniques are followed, and you will be viewed as a key member of the team.
WORKING HOURS:

Monday to Friday: 8am-5:30pm
-
Saturday: 9am-1pm
REQUIREMENTS:
-
Minimum of 3 years’ experience as a blockman.

Grade 12 with good written and spoken English.

Retail experience in customer service and sales.

Strong relationship skills and a desire to work with people.

Strong hands-on work style.
-
Training in food hygiene standards will be viewed as advantageous.
